Tasting Notes
The 2017 MadFish Reserve Sauvignon Blanc boasts an aroma of stewed apples, lemon blossom and herbaceous thyme. This is accompanied by a generous palate of nectarine or white peach, giving way to mouth-watering lemon curd with hints of more tropical grapefruit and pineapple. These generous flavours linger before a refreshing dry finish and a subtle flinty minerality.

Winemaking
Night harvest at cool temperatures, immediate crushing and pressing at the winery, and cool fermentation ensures maximum fruit freshness and varietal aromatics in this wine. A small component is fermented in older oak, giving richness and texture to the palate. No malolactic fermentation has taken place, allowing the crisp bright fruit notes to shine through.
