The best sparkling shiraz from the Great Southern sources fruit from the vineyards in the Frankland and Mount Barker regions.
The shiraz grapes come from low yielding dry grown bush vineyards delivering grapes of great concentration and ripeness. The grapes were hand harvested, sorted and fermented in small open top fermenters. The wines were matured for up to two years in older oak before the assemblage of different years was blended. The resultant wine then underwent the secondary fermentation in the bottle. Over two years resting on the lees aided the development of some more complex flavours and aromas. The sediment was then settled by traditional remuage prior to dégorgement, corking and muselet application.
This is an Australian sparkling wine made using the most traditional hand crafted techniques.
