2003 MadFish Rosé Tasting Notes

Technical Notes:

The 2003 MadFish Cabernet Sauvignon Rose is made from 100% Cabernet Sauvignon from two vineyards in Margaret River and the Great Southern. The fruit was de-stemmed, crushed and left for 12 hours cold soak on skins to extract colour and flavour prior to draining off the juice from the skins and cool fermentation in tank as with a white wine. Rose made with high quality Cabernet Sauvignon in this traditional method should demonstrate a light onionskin colour with true varietal aroma and flavour but without the phenolic and tannic characters seen in a classic red wine.

Tasting Notes:

The wine displays a wonderful vibrant salmon colour with a fragrant red berry fruit nose, clean and pure. The palate is fresh and clean with surprisingly intense berry fruit characters typical of ripe Cabernet Sauvignon. The finish is clean lively and importantly dry, the wine has sufficient intensity of fruit sweetness without having to rely on residual sugar to enhance mouthfeel.

This wine is best enjoyed chilled and with a friend or two.
